Broccoli Jalapeño Slaw (my first blog post)!

WOOO!!! I am super excited about my first post! Starting this blog is really a dream of mine and I can’t wait to share it with all of you. Cooking and staying healthy are huge passions of mine and it means so much that you’re going to share that with me. So without further ado here is my favorite recipe for broccoli slaw.

This recipe is seriously so quick and easy, it’s amazing! I love this slaw on tacos, sandwiches, or even just in a small bowl as a snack. The best thing about it, and my little secret, I use a broccoli slaw mix. It has the broccoli, carrots, and red Babbage already shredded and ready to go. SO great! You should be able to find it among the other bagged slaw mixes in the produce section of your local grocery store.

Broccoli Jalapeño slaw

1 bag broccoli slaw

1 jalapeño, very thinly sliced

1/4 cup avocado mayo

1 Tbsp mustard, I use Dijon

2 tsp apple cider vinegar

1/2 fresh squeezed lemon

1 tsp garlic powder

salt and pepper to taste (about 1/2 teaspoon)

  1. Deseed the jalapeños and slice them really thing length ways.
  2. In a medium size mixing bowl whisk together the avocado mayo, mustard, apple cider vinegar, lemon juice, garlic powder, salt, and pepper.
  3. Toss in the broccoli slaw mix and sliced jalapeños, mix well so that everything has an even coating.
  4. Refrigerate for about an hour, this lets all the flavors really soak in and makes it even better! and finally ENJOY!
